Hi and and all,

Pumpkin is one of the most nutritious foods on the planet and pumpkin seeds have

been called " THE MOST NUTRITIOUS FOOD " on the face of the earth! So, for

diarrhea or just good nutrition, pumpkin is great. I get all the pumpkins I can

around Halloween and freeze them for use throughout the year, as well as for the

pumpkin seeds. Alot of pumpkin farmers will give the pumpkins away for free

after Halloween is over. I have alot of great pumpkin recipes, too, from breads

to soups to cookies and desserts!

hi all - hi Bee.

just wondering if we are allowed to have pumpkin (libby's - only

ingredient is pumpkin). I was thinking of trying to make some kind of

treat with stevia and pumkin and fake cream. Any bakers out there

think some kind of candida friendly dessert can be made with these

ingredients for the holidays?

Hi . Here the Candida Diet Food List, and no pumpkin is on

Pumpkin is too high in carbs, with 12.8 grams of carbs per cup, while

spaghetti squash is allowed since it contains 7.9 grams of carbs per

cup.

Of course pumpkim is a cheat food, and so are sweet potatoes, but you

can make this Sweet Potato Souffle and use pumpkin instead:

Thanks that's all really helpful. Do you have suggestions for keeping while

pieces to go in stews or risottos? I don't really want to have to purée it all.

I'm very excited about chopping it open!

I suggest using it the same way you would a potato or hard squash if you want to keep some integrity to it. It is actually FUN to open a whole, unroasted pumpkin-very fiddly, but cool too! It is just easier to cut it once roasted, but you can do a lot more with it by keeping it raw. It is wonderful grated and made into pumpkin cakes, much like you would do a potato pancake! I also sometimes "rice" the chunks of it in the Vitamix, similar to how I do a cauliflower (see demo video of ricing at http://www.mymealmasters.com) It would be referred to as a "wet chop" by VM standards, but I just call it ricing since the pieces come out the same size and shape as grains of rice, lol.
