I'd be very interested in any reference you have that stress > eats vitamins and minerals. Well, I guess I got this idea from the fact that B vitamins and magnesium (in particular) are often deficient in stressed out individuals. I just did a one minute google on " stress depletes vitamins " and " stress depletes minerals " and got 125,000+ hits. For example, here's a paragraph from a popular educational website: " Most people, especially in Western societies, have to deal with some level of stress as part of their everyday lives. The body being in a state of stress uses up many nutrients in the release of stress hormones and glucose designed to prepare the body for 'flight or fight'. The main vitamins depleted are vitamin C and the B vitamin complex along with a number of minerals. Just one angry outburst can deplete the body's vitamin C stores. Repeated several times a day or living in a permanent state of stress can leave people severely lacking in nutrients. Also, when the body is in a stressful state, digestion and absorption of food is disrupted so the nutrients needing to b replaced may not even be absorbed. Intense exercise and competition are also stressful for the body and deplete the body of nutrients. " [http://ezinearticles.com/?Beware-the-Vitamin-Robbers & id=1332705] It seems that B vitamins, vitamin C, and minerals are the most hard hit by stress depletion. In addition, higher cortisol levels (associated with long-term unabated stress like in our modern world) also deplete additional vitamins and minerals. I'm sure PubMed would have some choice references on this topic, but I don't have time to search up the mainstream research. Let's just say that I am convinced (as you seem to be) that getting proper nourishment (proteins, fats, vitamins, minerals) is one important key to healing the immune system and healing disease.
