Organic means the animal can eat grains and be cooped up in a barn all it's life. Grass fed is likely to be a healthy, happy, grazing cow. You do not want grains so you should not have meat raised on grains. I eat raw and fermented meats, organs and wild raw fish daily. For example, when I cook hamburger I set the dial on my stove to slightly less than #2. Don't overcook them - you can leave the inside pink. Digestion unwinds or unfolds proteins, called denaturing, which is more difficult to do when the protein molecules are so tightly bound.
