Question about coconut flour

You can get coconut flour from Wilderness Family Naturals.

www.wildernessfamilynaturals.com. Keep it in the freezer. You need to sift

before you use it too.

Hi Bee,

I know you've said before that coconut flour is not allowed on the diet

or coconut meat but I was just wondering if you might reconsider. I

have a book on coconut flour baking and it says coconut meat has only 3

grams of digestible carbs, which is even lower than broccoli which has

4. Also, I looked on the back of my coconut flour package and it says

it has 0 grams of sugar. So do you still think it's not safe to eat on

the diet?

Coconut flour is ground up coconut meat, so the amount of sugar/carb is

the same as coconut meat, regardless of what is on the package label,

which is 6.23 grams per 3.5 ounces.

I'm sorry but my research says that 1 oz. of grated raw coconut meat

has 4.3 grams. I checked out several carb counters across the internet.

100 grams = 15.23 grams carb. so 1 gram = 1.52 grams, this is from

but I also checked several other sites. Please check around if you

think I'm still wrong. Remember, this is the carb count for

unsweetened coconut, maybe the carb count for the info below was based

on carbs for sweetened coconut.

+++, you can do what you wish, of course. When you have

anything using coconut flour do not change anything else for at least

5 days so you can see how it affects you.

++++Okay, now I'm getting confused. My original info said that 1 cup

of shredded coconut meat (which is = 80 grams) is equal to 3

digestible carbs. The rest is made up of 9 grams of fiber and the

remaining 68 grams are water, fat, and protein. So in the example

above, if 1 gram=1.52 grams of carbs then 1 cup of coconut meat (80

grams) is equals to about 121.6 grams of carbs. However, as I

mentioned, the total grams in 1 cup of coconut meat are not just made

up of carbs but also protein, fat and water.

Also, I don't think the coconut meat, which is ten ground into a

flower, is sweetened. It just taste sweet.

I got ths info from my Cooking with Coconut Flour book. I'm not sure

if it's 100% accurate so I will try and check other sources too. One

thing I need to keep in mind is that since the coconut meat is ground

to coconut flour, one cup probably has even more carbs then my above

example since is so finely ground. At least I would think.

Now I'm curious to see what the label on the back of the Trop

Traditions brand says in terms of the carb content.

What's interesting about coconut flour is that for a lot of recipes,

you don't even use that much. For example, my pumpkin muffins only

required 1/4 c. Also, you use it with a lot of eggs.

Despite all of this, Bee, I will take your advice and just lay of the

coconut flour as I've been doing. I wouldn't want to be eating

something that will unknowingly set me back. Perhaps in the future

though I can reintroduce it when I'm doing well.
