I dont see how a few ounces of cheese daily could be a problem when you recommend eating the juice of 6 lemons or 1 cup-which is about 6 grams of frutose a day. Frutose also feeds candida. 3 ounces of monterey cheese-which would be consumed in one day only contains .5 grams of carbs. Also if butterfat helps I recommend eating the cheese with an equal amount of raw butter to help digest the small amount of lactose. A goat or sheeps cheese might even be better because goats milk is naturally lower in lactose than cows milk. I would not overeat the cheese and if you can get unsalted cheese it makes it less addictive. In moderation, raw hard goat/sheeps milk cheese or unsalted raw sharp cheddars eaten with equal amount of butter seems like an ok option-- just a few ounces every couple of days, right?
