I have found that the saurkraut that I am purchasing from a local farmer's market to be constipating. I think that it has to do with the amount of time that they are fermenting it. Happy holidays to you too! I don't believe your constipation is because of die-off. Since you started on this program recently your constipation is probably because you changed over to the diet too quickly, by lowering your carbs without also getting your " good " fat intake up.
