It seems there is not a lot of info out there on this vegetable. It didn't even come up on FitDay. I'm not sure if this is even accurate as the little bit of info I found varied. Serving Size (52g) eat 5 to 9 a day Amounts Per Serving - % Daily Value* Calories 80 Calories from Fat 0 Total Fat 0g - 0% Sodium 5mg - 0% Cholesterol 0mg - 0% Total Carbohydrate 20g - 7% Dietary Fiber 1g - 4% Sugars 1g Protein 2g Vitamin A 0% Vitamin C 20% Calcium 0% Iron 0% > I'm thinking with the carb content being at 20g it's probably a no- no, unless the benefits of eating it outweight the bad, considering it's antifungal and antibacterial, etc. Kind of like onions? No? +++Hi . You take the total carbs 20g and subtract dietary fiber 1g = 19g per serving, which is too high in carbs. So it wouldn't be okay on the candida diet.
