I made the spinach bread yesterday evening and I love it! I made a double batch

and cooked it in a loaf pan. The edges get nice and crispy from the butter and

then I slathered it with more butter!

I'm thinking a couple of slices of spinach bread, some free-range eggs over

easy, and a lovely Hollandaise sauce poured over it. Mmm!
