I am not saying this is the case with cheese, but since being on this program, I

have seen many labels that misrepresent the carbohydrate count of their

product.  Some I have tried - against my better judgment - and paid for it

later.  I don't always have a immediate noticeable reaction - it can sometimes

take 3 or 4 days.  At this point, I pretty much consider any processed food a

" cheat " (except recommended fats).

With cheese, mold can also be an issue.
