Guest guest Posted December 17, 2008 Report Share Posted December 17, 2008 Hi Bee & Co., As I mentioned in another post, my sister was just diagnosed Celiac by an endoscopy biopsy (the only real way to diagnose Celiac). I believe I am also Celiac (and Bee believes we are all Celiac if we have candida). However, to receive an official diagnosis I will have to eat gluten for about a month for the villi in my small intestines to flatten out and make a diagnosis possible. Right now I am avoiding all gluten, as I don't have health insurance. By the time I am able to afford the procedure, I'll have been on Bee's diet for a couple of months. I understand that eating gluten at this point could be BAD. However, that's the only way I'll get the diagnosis. So tell me...what's the least-disastrous gluten I can eat for a month?
