I have a gas stove so I wouldn't want to go to sleep with it on. How does anyone simmer something for that long? Am I missing something? Could I turn it off and leave in in room temperature overnight and then put on the stove again when I wake up? I leave it on over night and when I go out and it's fine. If you ensure there is enough water in it, I'm sure it is safe to leave on the back burner of your gas stove. > > How does anyone simmer something for that long? Am I missing something? I made pork broth in my Crock Pot 2 days ago. When it was done I let it cool and put the whole Crock Pot in the fridge. When there is less I will transfer it to bowls.
