Guest guest Posted December 30, 2008 Report Share Posted December 30, 2008 Hi Bee and All: I have developed a very good hot cocoa recipe and one for mashed turnip over the holidays that are candida program friendly, I hope. Bee, would you please give me your input on the organic cocoa? I do know to avoid all cocoa from Africa which is the largest exporter. Cocoa tests are positive for high amounts of lead due to the gasoline used in those countries. South American organic cocoa is best. *NOTE: If unable to buy organic produce, please wash all commercial veggies in equal parts of hydrogen peroxide and vinegar (1/4 cup each in dish pan or sink of water) for 20 mins to remove all pesticides. Rinse and dry well before using. Hot Cocoa 2 cups filtered water 1-2 T. organic cocoa depending on taste 2 T. organic raw unsalted butter 1 egg yolk 1/4 tsp. sea salt stevia to taste (optional) organic only spices of your choice. I like cinnamon and nutmeg. Whisk everything but egg yolk on low heat until butter is melted. Whisk egg in last to prevent it from cooking. Pour in mug and stir a few times while drinking. Yield 2 cups Mashed Turip with Roasted Garlic 1 large organic turnip 1 bulb organic garlic 2 tsp. organic extra virgin olive oil 1/4 lb butter 1 tsp sea salt Remove all loose outer skin from garlic. Drizzel oil over garlic and roast in ramekin at 300 degrees for 20 minutes. (I use toaster oven.) Peal and cut turnip into 1 inch cubes. Steam turnip in large stock pot for 15-20 minutes or until fork tender. Remove all roasted garlic by squeezing the end of each clove individually. Mash into paste. (This paste also makes a wonderful dip for raw veggies. My kid enjoys it fresh out of the skin and I usually make an extra one just for us to share while we cook this recipe together.) Combine steamed and drained turnip, butter, prepared garlic paste, salt in large mixing bowl or blender (do in batches if blending.) Mix or blend until smooth and creamy. Serve warm. Your family will miss mashed potatos a lot less. Drippings make a nice gravy, too. Yield 4 servings. Hope you enjoy these as much as we have. Happy Holidays Everyone!
