In fact, it is often these very enzymes that cause the allergy problems which people experience due to mold. Enzymes are the essence of metabolism (life) and thus our immune systems are primed to recognize them; if foreign enzymes are detected in the lungs, the body alarms go off to signal the presence of another life form. (Similarly, the immune system is primed to recognize glycoproteins, components of spore cell walls.) I would be very cautious about spraying any enzyme into an environment, because allergenic residues could coat dust particles that are subsequently aerosolized. As with all allergens, it could take time to become sensitized and immediate allergy would not be apparent. Interestingly, there are thousands of chemicals that are regulated but only one bioaerosol, out of the millions of possibilities. Coincidentally, this bioaerosol is an enzyme, subtilisin, from Bacillus subtilis. Because it is such a powerful sensitizer, 60 billionths of a gram per cubic meter of air is the limit. At one point, before anyone realized the problem, up to 60% of workers exposed to subtilisin aerosol developed occupational asthma. May J.
