I try not to eat anything fried. Your right - cooking destroys many nutrients, and changes chemical structures. Its not uncommon to 'over-react', so dont feel bad - we are fighting for our lives. You should see me. LOL :-) Figuring out a healthy diet and food preparation plan is hard work. I have been working on my plan for 3 years at least, and still dont have it perfect yet. I might never get there, I dont know. Maybe I should buy a little butter for that, which I never use. Generally I use very little, but if you want something, what? Obviously for Italian, olive oil. And I keep the temp as low as possible as they say that cooking over high heat not only destroys enzymes but also causes the formation of free radicals, I think? Too much info to remember! For soups I generally don't use any oil, and to warm up something, just a little water in the pan. So maybe all is not lost. I over-react? LOL.
