You want them fork tender (stick a fork in and see if it's soft) Wash the beets and cut off the greens before you cook them. Add them to salad or eat them warm, plain, or cold with mayo. You can also juice them (in a heavy duty juicer). Maybe one beet, mixed with other vegetables or an apple. The health food store sells a German brand of beet powder.
