The other thing that occurred to me, , is that if your are eating

indigenously (ie. eating a lot of the traditional foods of Mexico) is to be

aware

that, in the main, the oils used in food preparation are of the saturated and

trans fat variety (like hydrogenated oils) ...a huge no-no for GB and

cardiovascular disease. On one particularly memorable night in March of this

year, what

triggered one of my worst GB attacks was a visit to a local Mexican restaurant.

The hydrogenated cooking oils the food was slathered in, in combo with the

spices used, really gave me a run for my money.

If at all poss...stick to using extra virgin olive (first cold pressed) and

flax seed oil in all food preparations (or raw, unprocessed butter, as Will

recommends) and also supplementing with the Omega 3s and 6s (or eating oily fish

like salmon). In less than half a year, I've managed to reduce my cholesterol

levels by half with diet alone...not by eliminating all fats, just the bad

ones. I wasn't in the dangerously high cholesterol range, relatively speaking,

but conscious eating has brought my levels down significantly, nonetheless.

It's definitely a good place to start with the gently, gently diet approach,

before bringing out the big guns.

The olive oil & flax seed are both good to use, but let's not forget coconut

oil. It's very healthy to eat, and good for numerous

ailments/illnesses/diseases. I cook with it all the time.
