The pork shoulder was smoked over a slow fire (not important to this discussion) and mopped with a vinegar-red pepper sop (important). When it was eaten, the vinegar cut the PERCEPTION of fat when meat was eaten from the shoulder and probably acted as an emulsifier. Therefore when you had a pork plate you didnt have that bloated, uggh feeling of having eaten too much of a rich meal even if you had a fair amount of meat. If however, this step was not taken (ie the tomato people who omitted the mop and went straight to sauce), the experience came off differently after your meal. Since I discovered this BBQ truth, I used a greatly diluted teaspoon to Tablespoon of vinegar whenever I ate a meal that was too rich when I had the ugggh feeling. I have often wondered if the lemon juice or grapefruit juice called for in the flush recipes was not serving the same purpose. I know apple cider vinegar greatly diluted is one suggested gallstone attack stopper, although I havent tested it. Now we are discussing Phosphoric acid. I am wondering if it doesnt serve a similiar purpose, namely it is an emulisifer of sorts for the fat...now this is when I begin kicking myself for not playing enough attention in chemistry class.....
