Coconut Milk & Meat Leftover

Howdy Y'all,

OK, from reading several messages about Coconut Milk & that it is OK for us to

consume. I bought a coconut for $1.50. Drilled 3 holes in the top, set in on a

glass tumbler, drilled one hole in the bottom. Waited for it to drain, wrapped

it in a kitchen towel, set it on the floor & took out a lot of hostility on it

with a hammer!

Removed the meat from the shell. Chopped it fine. Mixed 1 C. meat with 1 c. hot

filtered water & whirled it in my blender x 3 minutes or so. Strained it with

cheesecloth & squeezed out all liquid. Dumped pulp back into blender & added 1

C. hot water to ALL of the pulp. Strained & squeezed again. Also, I went ahead &

dumped in the original drained liquid from the drilling.

I snagged 6 mini ice cube trays at yard sale. So I filled them with the milk.

Had enough left for maybe a pint to put in the fridge. When this was gone, I

used ONE cube in my decaf coffee every morning. Should last me a while. I enjoy

this treat so much!

My question is what to do with all of this leftover PULP - MEAT??? Has all of

it's value been removed? Could it be used in cooking? Is the MEAT bad for us? I

ate a bit, no flavor at all, just crunchy. I tried to make Macaroons with

Stevia, but they were a flop.

No, coconut meat is not bad for you. Like I wrote before the net carb grams

should be 7.9g per cup or lower in order to be allowed on this program.

If you enter 1 cup of coconut meat in fitday.com it has 12.2g total carbs minus

5.2g fibers = 5.0 g net carbs so it is okay.
