In it, she states that nutritional yeast must be processed at low temperatures as " high temperature processing causes the naturally occurring glutamic acid in the yeast to break down in to MSG. " I did a quick google search and read thru this very informative article. http://www.daystarbotanicals.com/nutritionalyeast.html I look FWD to your input, Bee. I'm also interested about the quality of the nutritional yeast you recommend at iHerb. I know the nutritional yeast I can buy locally does not say how it is processed. One main reason is because they are marketing an alternative product to Nutritional Yeast Flakes produced by many other companies. So of course they are trying to make you buy their product instead. Glutamic acid occurs naturally in many foods, and is called a non-essential amino acid (protein) because our bodies can make it. Essential amino acids are those our bodies cannot make. It is also found in the cells of our bodies, including mother's milk, and involves a wide variety of brain functions since it functions as a neurotransmitter. This natural glutamate in plants and animals is known as L-glutamic acid. Our normal digestive process slowly breaks down this natural or " bound " glutamic acid and it is then delivered to glutamate receptors in our body and brain. Broken down this way, it is harmless. " <<<Obviously Nutritional Yeast Flakes don't contain 78.2% glutamate, etc. Nutritional yeast flakes aren't processed with chemicals, etc. and it contains no white crystals. If Nutritional Yeast Flakes were neurotoxic like MSG then everyone taking it would not be able to get healthy, like many people, including children, are on my program.
