Brix is the measure of sugar in the syrup. The lower

grades may well have more nutrients, as they are

darker. The flavor differences will come from

characteristics of locale and the kind of year the

tree experienced. If you have access to organic

syrup, there may be some added benefit. If you're

buying from a farmstand, ask what kind of anti-foaming

agent they use. Some processors used formaldahyde in

the old days. When working to get a product I used to

sell made kosher, I was told the old Quebecers ran sap

over a ham bone to reduce foaming when they boiled the

syrup down. That might have been apocryphal, but

there you go.

Thanks and Yes I have aquired organic.

I have been feeling fairly good since the liver cleanse, except for a

dull ache in my right arm which seems to radiate from my right chest.

If I can get up the will power for the epsom salts again I will do a

liver flush at the end of my cleanse.
