Wow, how interesting - just went to a Whole Foods cooking demo Saturday, and they talked about the kelp noodles, and here you are with a recipe and telling us they are good! Curry Kelp Noodle Stir Fry

½ package kelp noodles – cut into 3 inch pieces, soak 1 hour with ¼ lemon wedge

Grate: 2 carrots, 1 zucchini, 1 inch ginger

Slice very thinly: 1 celery stalk, ½ sweet onion

Greens: 4 kale leaves pulled off stem, 2 large handfuls of spinach

Turn on skillet, add ¼ cup water, heat to bubbling. (You can use oil if you want)

Add carrots, zucchini, ginger, celery and onion and sauté 15 to 20 minutes.

Add greens and sauté until wilted.

Add drained kelp noodles. Heat a couple of minutes.

Prepare sauce.

Sauce:

1/3 cup lemon juice

¾ cup coconut milk – ½ can

1 tablespoon curry powder

¼ cup sesame seeds

½ teaspoon himalayan sea salt

½ teaspoon white pepper

pinch cayenne pepper

Add all sauce ingredients into Vitamix and blend on high a few seconds.

Add sauce to veggies and kelp noodles and heat a minute. Serve with sesame seeds or hemp seeds on top.

Well, I'm so excited to learn about these. At first I thought people were talking about the rice noodles (cellephane noodles) since they are clear and thin strands, but this is much better, since it's filling and with nutrients, but not starchy!! What a find! Thanks again...Whole Foods got me thinking about it, but I kinda forgot, but the post has me out buying and eating! Hope you are enjoying your vacation in MO, tho the kelp noodles probably won't be found there!! That recipe looks great!I'm visiting my parents in Missouri, and haven't found Kelp Noodles here yet (small, rural town) but when I get to Springfield to visit my sister, I'm going to see if they have any in the "big city" ;-)Ginny - I really enjoyed my one bag that I've eaten so far - what I especially like is that they are filling, but low carb, and low calorie!!! (Google to learn more about them - really healthy food to eat…)
