Ok, Will. Taking your advice, remembering I like liver a lot, I too had a liver and onion orgy on Saturday afternoon. It was 's Natural Beef Liver. My enthusiasm was surprising. While chewing away in utter happiness I noticed the ducts, too fibrous to be adequately chewed, that I had removed from my mouth. Several questions came to mind : 1) Do large animals (cows, calves, buffalo etc) have gall stone issues or colicky liver disease? (if so how can I tell the healthy from the not healthy when buying liver). 2) If not, why not since they are eating a grass (vegetable) and sometimes grain diet? 3) What is your opinion, Will, being in the food business, of Beef? It is what Harry's and Whole Foods, who now owns Harry's carries therefore readily available for us in Atlanta. 4) If you dislike Beef, how does one obtain Buffalo, grass-fed organic. Do you have a source that will accept mail orders? What should one look for when buying good quality buffalo meat? 5) If you dislike Beef, what beef do you like? I recognize you are in beef and pig country and I am in chicken country, but with the Internet and UPS and Fall approaching anyone with a freezer should be able to stock up on provisions. BTW, after my rather surprising reaction to the liver (very similar to yours), I AK-ed that I needed to eat liver twice a week for 2 months. I guess I need the B-12 (I eat less meat than you do) and the support after the detox my liver has gone through this year. Thanks in advance for the info.
