I find Spanish olive oil too bitter though Italian is a good second best. Many times it is because it is not very good olive oil, even from HFS are not always good. My favorite for flavor is Greek oil. More buttery type flavor. Someone mentioned a dark bottle, and I rarely find it in a dark bottle, though.
