I have heard it is a great source of iron and minerals, but I have also heard it may be very high in Copper. I am not sure ? > What is your opinion of it ? I realize during the first phase of healing, it is not allowed and I am thinking it is because of the hight sugar content. But, can it safely be added later ? > +++Hi , You are right that no one should have Black Strap Molasses since it is high in sugars. Molasses is a by-product of the processing of sugar cane or sugar beets into sugar (most sugar beets are also genetically modified). The word molasses comes from the Portuguese word melaço, which ultimately comes from mel, the Latin word for " honey " . The quality of molasses depends on the maturity of the sugar cane or sugar beet, the amount of sugar extracted, and the method of extraction. It also doesn't contain the kind of iron our bodies can use, which is called heme iron that is only found in animal products. Carbs like sugars contain non-heme iron. The best source of iron is red meat, particularly liver, and the best sources of minerals are listed in my program. Cheers, Bee
