I use organic, shredded coconut, mostly on my salads. Isn't this the same thing as coconut fiber? I can't imagine the fiber coming from any part of the coconut other than the meat. Dried coconut meat contains 63 grams of lipids and 16 grams of sugars per 100 gram, according to the USDA food database.
