Definitions:

• Assimilation: The conversion of nutriments (foods and supplements) into living

tissue.

• Metabolism: The chemical processes occurring within a living cell or organism

that are necessary for the maintenance of life.

• Antioxidant: A substance that protects the body against the destructive

effects of free radicals.

• Free Radicals: Toxins created during normal body processes and also from

outside toxic sources.

" Butter contains lecithin, a substance that assists in the proper assimilation

and metabolism of cholesterol and other fat constituents.

Butter also contains a number of antioxidants that protect against the kind of

free radical damage that weakens the arteries. Vitamin A and vitamin E found in

butter both play a strong anti-oxidant role. Butter is a very rich source of

selenium, a vital antioxidant--containing more per gram than herring or wheat

germ.

Butter is also a good dietary source of cholesterol. What?? Cholesterol an

antioxidant?? Yes indeed, cholesterol is a potent antioxidant that is flooded

into the blood when we take in too many harmful free radicals--usually from

damaged and rancid fats in margarine and highly processed vegetable oils. "

Bee's Notes: Of course there are many other sources of toxins that become free

radicals in the body, including drugs, pesticides, chemicals in foods and

drinks, personal care, cleaning and other products, etc.

Other antioxidants on this program include vitamin C, B vitamins, niacin, the

combination of the good fats and oils, i.e. omega 3, vitamins A, D and E,

unrefined coconut oil, and other natural fats found in meats and eggs.
