Hi Margaret, Ghee is prepared by melting and simmering unsalted butter (made from whole milk) until all the water evaporates and the milk solids settle at the bottom, which is poured off. Butter Oil is made from cream; to make 1 lb of butter oil, it takes 16 lbs. of cream. Butter Oil is made by centrifuging (not heating) cream until the oil separates from the milk solids and whey.
