I've recently been using Truvia and I like it as well, although I probably ought to do some more research on it. In regard to the weight gain. I've experienced this along with several others I know that drink kefir and after a couple of months the weight stabilized again. -- Roy .... so now I am perhaps healthier but also 5 lb heavier. I've never been a big fan of stevia as I've always found it too bitter no matter how much I use. Not sure where I'll find it in rural Nova Scotia? my husband tells me we used xylitol while we did Atkins a few years ago. I will try dissolving the stevia powder in water and adding by dropper to reach a nice sweetness without the bitter taste of overuse. I like my kefir sweetened with fruits or raw fruit and vegetable juices without the sugar. The two complement one another quite well in terms of taste and nutrients. Sometimes I would put a bit of carob powder or some berries in too. I usually put in my omega 3 oil (the banana cuts the taste of the flax seeds) and I also often use molasses for iron (it's non-constipating and has really helped my heart rate come down--something I've been needing to happen for years). So my smoothies can be quite interesting. Now I can't have kefir anymore. My son is allergic to just about every part of milk--even goat's milk. So I'm stuck with kefirless smoothies.... Sigh. I add a small bit of semi-sweet choc chips to my smoothie along with nuts. Sometimes I stir in granola cereal after the mixture has been blended. When I do this, I count this as breakfast or complete meal. It is very filling and like you said it is laden with calories. My 7 yr old loves this also. I use raw almonds to the mixture and blend which adds a nice healthy flavor. The choc. chips are not healthy but they sure do make it taste good. I am addicted to chocolate and go into withdrawals without a little. All I need is a little though. On the other hand, I dont drink coffee, lol. Stevia I have found a 50 pkt box of stevia (TOTAL wt. 1.75 oz) for 7.49. One pkt is a serving size. Is this about the going rate or can it be found cheaper? I never liked it (tried different ways, different brands, all tasted bitter, not sweet) so haven't been keeping up on the prices of it now that it's all over the place. If you have small amounts of green leaf stevia every day it may be okay for you. For some people it makes them crave sugars more, by feeding their sweet tooth, so be cautious about it. Some people cannot tolerate any stevia, since it is also a carb. The reason it is included is because it is used is such small amounts and not very much is consumed per day. There are also the same issues with lemons and limes, so that's why my recipe considers it a cheat. They are lowest in fructose, but we have to remember fructose is one of the worst kinds of sugar for anyone, even when they are healthy. That is because of how the body processes fructose compared to other kinds of sugars. If you are trying to find a dessert your taste buds haven't changed yet, which takes time. It is easier and better to " bite the bullet " and not have anything sweet until they do.
