To make Kefir you need to obtain some Kefir grains from a friendly Kefir indulger who hopefully lives near you...Kefir grains propagate & grow in frsh milk even as they ferment the product & consume the lactose etc. Kefir Grains are believed too have originate somewhere in the Caucausas Mountains way back when..the exact origin is unknown but legend has it they were a gift from Mohhamed to the Orthodox....s army & also Attila & his barbarian hordes were said too have marched on mares milk Kefir (freshly fermented in a hide bag strung over the neck of thier horses) Your based in NZ?..according too your email adress(suffix)...so you can try this database below & see what you come up with in terms of nearby Kefirites. http://www.rejoiceinlife.com/kefir/kefirlist.php Otherwise your best bet is too join Dom's Kefir Forum (See adress below) & post a message supplying a rough idea (region/State/City) of where you live & requesting a small supply of grains too get started (If there is noone with grains living near you they can be posted..they are very hardy)...then all you need is milk...Kefir will ferment any sort of milk pretty much ..from Super UHT , too raw(Unpasterized) organic milk (I am lucky enough too have access to raw cows & raw goats atm).... I have three strains of grains (got them from 3 different places anyhow but they all look alike!)and was going to send her Doms site but you covered everything in your letter!!
