It actually will, with fresh squeezed juice, help by temporarily emulsifying with he oil and make it more, much more, palatable. It also has some limited capacity of helping with the digestive action but that is very limited. I have found that there is information on getting the lemon juice more colloidal. This is done by adding egg yoke to the mix.
