Guest guest
Fois Gras: Goose liver. Geese are surgically altered to literally tie off the bile duct. This causes the liver to swell like a water balloon as it cannot release its contents. This causes the liver to become quite large and fatty. The goose swells like Jiffy Pop too. Considered to be both a delicacy and an essential ingredient to haute French cuisine. Probably great for gallbladder disorders but might stimulate an attack. Sorry for not responding sooner Will, I have been trying to find the time to dig up more info. Thank you for correcting me on the present method, I am glad to hear they do not go through the process I thought. I am in a bit of a quandary though: I have one of those really disturbing incidents lurking in the back of my cognitive awareness. I have a vivid picture of an info-documentary I am sure (at least until now) that I saw as a very young child (early 60's) on the production of fois gras in France. Wouldn't eat chicken or turkey for years. Now I won't rest until I am able to dig up the historical (hysterical?) methods...
