This would be early or late in season when they return. When you buy them in a store they are usually at the " tougher " stage and therefore more bitter. " Wild Dandelion Salad " is one of my favorites, and I am counting the days I can go out to the park and pick them fresh! The salad dressing that I like to use is Raw Tahini Dressing. 2 tbs raw tahini 1-2 cloves garlic 1 lime juiced dash of grey sea salt 2-3 tsp raw honey Blend well. If it's too thick add a bit of raw apple cider vinegar or water. Or adjust the amount of tahini and honey if its too thin. Pour on bit size pieces of dandelion greens, diced tomato and vadalia onion. Toss and serve. Hope you enjoy it as much as I do! Donna
