Guest guest Posted September 7, 2005 Report Share Posted September 7, 2005 Hi Lori, I've never made kefir but many people make it with pasteurized/cooked milk. There are many recipes online. I buy it from a specialty store where it's raw and organic. Private membership, secret location. When I don't want to make the drive I get it at wholefoods or Erewhon. The ones from the store are made from pasteurized goat milk but you'll still get plenty of the benefits. California and Arizona are the only states allowed to produce raw dairy products and they have to pass the same tests as standardized cooked/pasteurized dairy. In order to pass the same tests as cooked/pasteurized milk can you imagine how clean this raw milk has to be? (they have to be super clean). The other states---NO !!!! and that's a good thing especially states like Texas where they have thousands of animals piled on top of each other in a lot, in unsanitary conditions and especially where so much puss ends up in the milk, drinking it raw would probably kill you. I wouldn't consume any raw dairy that's not organic and the animals need to be grass fed if they are cows and there needs to be a smalll number where people are catering to them individually and they need to be free range, roaming around in the sun not locked up in cages, catching diseases and being pumped with steroids/hormones, antibiotics etc. Start talking to the farmer's in your area, go to your local farmer's market. That's what I did. I started talking and asking questions and I found out about places under the radar Many places to get raw dairy are secret. Guest guest Posted September 9, 2005 Report Share Posted September 9, 2005 Wow, if you could find a source close by of Kefir grains, they are far superior to the stuff that is sold and you can make it yourself and it's easy once it's reconstituted -- just brewed overnight at room temperature. Most of the time they're free because folks who have the grains love to share and merely charge for postage to ship.
