Hi Rich,

Welcome to the forum. When the student is ready the teacher appears. That's

why you know about kefir now.

If you use the proper culture and add lipase powder to your milk I guarantee

your mozzarella will taste good. Here's your recipe:

You needed to add salt and work it in before you form the ball. Makes it so much

better. You do loose a lot of volume in making cheese. I think about two gallons

milk for me made about a two inch thick round the size of the smaller coffee

cans when you could still get them. And until home made cheese is well aged it

is very squeaky rubbery.

Thanks - I've gotten some really great recipes and web sites for

mozzarella from folks here! One of the web sites had articles on goats - where I

got stuck in for a few hours,,and think now I'd like to get a few goats since we

have some acreage.

Anyway,,I have a new appreciation for cheese - I had no idea the amount of milk

necessary to make it - and the patience you need.

This is some great site! I have ordered Kefir grains right here, and have my

Mason Jars ready!

Subject: Thanks!

Hi,

After finally making in home with two very tired but happy kids, I wanted to

thank those of you who we met at the Painted Turtle family weekend this

weekend. It was so wonderful to put faces to names, meet your amazing kids and

have a chance to exchange all our triumphs and tribulations. Our family is

somewhat new to this process and although it is tough to have PI as part of our

lives, I feel so fortunate to have all of you behind us in this journey.

As a few of you heard us talk about this weekend, we have been struggling with

getting a more specific diagnosis for our youngest, getting our insurance to

approve Sub-Q for our boys and having a hard time getting in touch with our

doctor. I came home to an email from our doctor (he must have known I was

talking about him) with more test results that I have been waiting for for over

a month and two letters from Blue Shield approving & Jordan for Sub-Q!

Yippee. :) We will see how it goes. We do know know that Jordan struggles with

both B-cell and t-cell maturity. Not sure what that means, they of course want

to run MORE tests. Ugh!

Hope those of you who were there this weekend enjoyed yourselves as much as we

did and traveled home safely. We look forward to seeing you again at another

event soon.

Mom to (6 CVID) and Jordan (3 CVID)

This is my 1st post to the group, but I was really sad to read that BG might stop the group, and was heartened to hear that he decided to keep it going. I guess you could call me a "lurker" as I subscribe to the e-mail lists and read my mail every day and save into a "microelectricity" folder on AOL every post of interest to me. I plan to build some type of device, I have gotten as far as the battery and the sponges, and I'm sure I have an old electrical cord to cut up somewhere around here....LOL its just a matter of taking the time to do it. Anyway, I am writing this to let BG know that I am sure that there are many people out there like me that recognize the value of all his time and hard work, even though he may not hear from all of us. Kudos to pioneers like you, BG!
