Welcome! Have you read the book " Nourishing Traditions " yet? It's a cookbook, and the basis for this group -- and will give you some great hints! There are a lot of good ideas in there that it sounds like you aren't using yet. I don't really cook that low heat -- a lot of folks here just don't cook at all, they eat everything raw. While HIGH heat cooking can cause damaged fats and carcinogens, I'm not sure that everything has to be cooked crock-pot low (unless it's just easier to). Cooking broccoli for 4 hours takes a lot of the flavor out of it. I use good stainless steel (if you can get to one, the Costco Business store has excellent Sitram for a reasonable price) cookware, and do sauteeing, stir frys, and stews. An occasional roast. Accompanied by a pile of fermented vegies. Using butter or coconut oil. Most meals are fast and simple -- I'm compiling a cookbook of really easy recipes but it's not very full yet. I wish I could try Raw goats milk, but can't find any and too scared to drink milk as allergies are severve. I loose lots of weight when I eat things I am allergic to. I really thought fermented things were out of the question for candida sufferers. I did try the vinagar oatmeal. I brought some into have it muscle tested. He said the allergy was so strong that he could not even treat it. Vinagar is also a no no with candida. I don't always use crock pot, but is so much easier to wake up to breakfast being already cooked. I eat slow cooked food because of my weakened physical condition and this is supposed to provide more energy to the body, if cooked this way. Raw is not in the cards for me. I weakens a weak body, you have to have strong digestion to handle it. This is from healing with whole foods. I really don't like crunchy brocolii and softer is easier for me to digest. I have the digestion of a baby and have to treat it very carefully. I am able to eat more foods now though. I have added to veggies to my small list of allowed things. What is costco, must be a local store. for oil I use the fat that comes off the stock. I am allergic to all veggie oil and butter. I think butter tastes nasty anyway. I would love to try fermented veggies. Since I can eat beets, I might start with them, just scared of what it will do for my hungry candida. My medications are what is holding me back. I used to have candida problems, but have finally gotten them well under control using acidophilis and a whole foods diet and a few other things,including acidophilus. I couldn't eat much in the way of raw foods for a long, long time. Now I can eat raw milk, goat or cow, raw egg yolks in milk shakes and small amounts of fruit. My digestion used to be awful. I'm much better now. I still get B12 and B-complex shots every week. These shots really gave me a big boost. My HCL(stomach acid) was very low and I still take a little HCL to aide in the digestion of every meal. Digestive enyzmes also help. I continue to take them after every meal. I found not eating any refined foods at all helped a lot and now I can't stand to eat them. Yuck! Coconut oil should help you. Have you tried it? It is super easy to digest. You might check out coconut oil posts right here on native- nutrition and see what you think about other peoples experiences with virgin coconut oil. There is also information about coconut oil and some other excellent articles which are specifically written for women at the Weston A. Price web site. I know how discouraging candida can be. It is all part of the leaky gut and subsequent allergies caused by poor digestion. It could have been a virus or some other problem that made you vulnerable. Hang in there. I improved and you can too. Why do you think your medications hold your healing back? Are you dissatisfied with your treatment plan or your doctor? I really hunted for a doctor before I found one who could help me. I also read books and learned a huge amount on my own. It sounds like you are doing the same thing. Good for you!
