I've been a staunch supporter of Price/Sally Fallon/NT for two years now and recently set up a chapter here in the Philadelphia area. I got interested in eating healthy when I realized I had no other choice but to become proactive in healing my screwed up body. For several years I suffered from severe Candida/Dysbiosis, allergies, acne, chronic UTIs, etc and was told repeatedly by allopathic doctors that there's no connection between those ailments and diet. Ha! You know as well as I do that that's a bunch of malarkey;) Anyhow, to make a long story short, I ended up moving to Northern Cali (just moved back East in March - how do you Bay Area people afford to live out there?!) for a few years where I entered a holistic nutrition program. I am now a certified diet counselor spreading the traditional/whole foods diet mantra to anyone that'll listen. Back to 's comment. , please be aware that Candida and other fungal bad guys treat their victims differently. While another sufferer might have a terrible time with fermented foods, another might find them to be extremely therapeutic. One of the most important things to keep in mind is that everyone is different. I've found the so-called Candida diet rules to be overly strict and far too generalized. Also, one should always do their best to determine with a stool culture (a Comprehensive Diagnostic Stool Analysis works best, IMO) whether or not yeast is really what's causing the symptoms. It could certainly be yeast, but it might also be pathogenic bacteria, as it was in my case. Bacteria and yeast need to be treated with different remedies. I suffer from many food sensitivities, which more or less went undetected in a blood test I recently had done. However, I find that if I can eat those suspicious foods (wheat and dairy for example) either sprouted or fermented, I have a much easier time digesting them. I also try to eat them in small quantities so as to not overload my sensitive constitution. Also note that exercise is important when trying to overcome candida symptoms. Getting lots of oxygen into your body is crucial. So, , or anyone else who's reading and has similar things going on...keep on truckin' and feel free to ask me anything. They have campuses there in Cotati and also in Berkeley and Santa Cruz. The way it works is they divide up the program into three section. The first six months is the diet counselor program, the second six months is for nutrition education, and the last section is a year long and is training to become a nutrition consultant. They also offer an organic culinary arts program. If you don't live in CA you can take the course as a distance learner.
