>>>>> " High meat " is made in the refrigerator (below 50degF) in aerobic

conditions (air is added every three days, just as it is being used

up when the jar is filled 1/5th full of meat).

****How does 'high' meat taste? if i try it, i guess i better follow this

procedure carefully to maximize healthy bacterial content? how long do you

let it get 'high'?

It tastes different as it ages. Good at first, until it breaks down

so much that it stinks. I eat it outside with my nose plugged (about

a big marble size at a time). Some swallow it whole to avoid chewing

and the resulting bad breath. I just follow it with a meat meal.

As for the procedure. If you let it go longer than 3 days without

airing it out (outside), it will just stop growing bacteria. The

cold temp of the refrigerator prevents botulism. The bacteria that

have been growing probably just go dormant until you feed them with

more air.

Because the bacteria can be aggressive, it is recommended not to eat

high meat unless your diet is primarily raw. Aajonus recommends

making it right as you start eating his primal diet. Then, when it

is a month old, and you have been eating raw for a month, you can

begin eating it. You eat a marble size piece once or twice per

week. It is known to lift depression in those who need it (some

depression is the result of low levels of bacteria in the body). It

has never caused any euphoria or other mood alteration in me. I have

eaten beef that is 6 months high.
