Guest guest Posted May 18, 2002 Report Share Posted May 18, 2002 I just put a pumpkin nut muffin recipe in the bread recipes file folder. They turned out so good and moist. They will not rise up like typical muffins, unless you use bulgur flour and lightly mix the batter instead of letting the mixture soak, but it does not take away from their goodness at all. Obviously, you can add or decrease the spices as you wish; we like them just the way they are. I am working on a granola recipe right now. It has been my favorite for years. I am adapting it to be NT friendly. It is a good snack and cereal. Also, I am going to be working on a banana muffins/bread recipe next, and I will pass that along as well if it turns out good. I am trying to get a collection of breakfast/snack recipes for my family that, especially, the kids will like; things that can go into their lunchbox, be a good after-school snack, snack on the go, etc. I've enjoyed the other ideas I have found in the archives and want to add to that for others who are still looking for more ideas. I know how hard it is to help the children adapt when they have already formed " favorites " . I'm trying to adapt our own recipes so the kids have the foods that they are familiar with and already like. Have a good day.
