We should all remember the author of this article, Taubes. He

wrote " The Soft Science of Dietary Fat " that appeared in Science

March 2001. You can read it here. You will need Acrobat Reader, but

can save a copy to your hard drive:

I've been gone, but now I'm back. Here's my response:

As a retired, and maybe I should say former, dietitian, I understand how

easy it was to fall into the 'fat is fattening' trap, but all I have been

reading about the problems with excess carbohydrate is making perfect sense

with what I have learned in graduate school.. Having a husband struggling

with diabetes, cholesterol and high blood pressure (Syndrome X) and all the

medication that involves I have been reading everything I can find related

to the subject, including 'The Schwarzbein Principle', by endocrinologist

Schwarzbein, and .' Life Without Bread, How a Low-Carbohydrate Diet

Can Save Your Life' by Christian B. Allan, PhD & Wolfgang Lutz, MD, both

providing a more moderate view of the low carbohydrate diet and its health

benefits.

The stumbling block is always the cholesterol question, but this is another

example of jumping to the wrong conclusions far too fast. To understand what

a bogus concern that is I suggest reading 'The Cholesterol Myths, Exposing

the Fallacy that Saturated Fat and Cholesterol Cause Heart Disease', by Uffe

Ravnskov, MD, PhD, Swedish scientist who questioned the cholesterol

champaign from the beginning. Ravnskov, a medical doctor with a PhD in

chemistry, has had over 40 papers and letters published in peer-reviewed

journals criticizing what Dr. Mann, formerly of Vanderbuilt

University, once called " the greatest scam in the history of medicine, "

namely the Lipid Hypothesis-the belief that dietary saturated fats and

cholesterol clog arteries and cause atherosclerosis and heart disease. For a
