Guest guest Posted May 26, 2002 Report Share Posted May 26, 2002 Hi, Yesterday I started fermenting some wild salmon (a la NT) and found myself hating to put plastic around it. I know we Americans have traces of plastics in our blood and I certainly hate to add to this burden. Surely there is another way to ferment this fish, because plastics have not been around all that long, especially plastic wrap. I wondered if someone knows of an alternative way to do this, so I could avoid the plastic? How about parchment paper? Do you think it would hold up for 6 days of fermenting?
