If your markets don't carry whole fish, try a specialized fish store. Or, an oriental market: they have GREAT fish, and the SELL the bones and heads (apparently their clientele are more educated as to the use of bones!). Guest guest Posted July 20, 2002 Report Share Posted July 20, 2002 hi, chris-- i get my fish carcasses free at an asian fish mkt. i just call up ahead of time and ask them to save them for me. otherwise, they just throw them out. (i suppose that demand varies according to region.) a word regarding the heads: i always remove the gills. once, when i didn't know better, i gave heads w/gills to my dog, who became quite ill for one day. the next time i gave her fish, she ate around the gills. when my cousin the seafd mkt manager saw this, she praised delilah and explained that her asian customers always request that the gills be removed. i don't know why, but i'll follow their lead. allene Quote Link to comment Share on other sites More sharing options...
