Hi All,

I've been slowing implementing NT over the past year and was thrilled

to discover this group about a month ago! I've been lurking since

then.

, since I don't know which part of the country you live in, I

don't know how likely it is your local store will carry this bread,

but I love Baldwin Hills. They are located in VT and I purchase it

from my organic market in MD.

ALL of their breads are sourdough, organic, and, as far as I can

tell, are NT compatible. They make whole spelt, whole wheat,

cinnamon raisin, rye, sprouted wheat & honey (and I don't remember

what else).

Here's a description of their spelt bread: " Baldwin Hill Bakery has

been making traditional sourdough bread in New England since 1975.

Our organic Spelt bread is a high quality, naturally delicious bread

with a subtle nutty flavor.

Our starter, which causes the dough to develop and rise, is a slowly

fermented culture consisting entirely of organic spelt flour and pure

filtered water. Unlike ordinary baker's yeast (which acts only on

the starchy portion of the grain), our starter begins the digestion

of all elements in the grain, making the bread easier to digest and

assimilate. This process is similar to that used in preparing

yogurt, wine, beer or sauerkraut.

At the end of the fermentation period the starter has become a rich

culture and has developed great leavening power. A portion is mixed

into the dough which is formed into loaves and allowed to rise

slowly. This allows the aromatic quality of the starter to permeate

the dough and initiate the fermentation that releases the true grain

taste and develops its incomparable flavor. "

I buy " The Baker " brand spelt bread. They make tons of " fluffy, bready " stuff,

but they also have a bread that is imported from Germany and lists the

ingredients: spelt, water, sea salt. It also says on the label that the bread

is naturally fermented. It comes sealed very tightly in plastic and I keep it

in the fridge. It's very dense and I don't recommend it for sandwiches that

will be sitting in your lunchbox for awhile (it doesn't hold together very

well). But, it tastes great and it's real sourdough. It seems very NT to me,

just from the descriptions of homemade sourdough on this list.
