Hi Alec!

When I first cut out wheat I messed around with replacing it

with something, but I think my wife stressed about it more

than I did. Before many months we had millet bread, spelt

bread, all sorts of breads stacked in the freezer.

It took a while but I finally realized that I really don't

like bread, and my body doesn't relate to grains as food.

Most grains anyway. Along the way I read a wild book you

may have heard of, " Beyond the Zone " by Peskin,

and shortly afterward stopped worrying about eating any carbs

altogether.

I say 'stopped worrying.' On occasion I still eat chocolate

cake or a fortune cookie, but mostly to be polite. Left alone

I can go weeks without eating any grains and I feel wonderful

when I do. When family or others make that difficult I just

eat some grains and feel less than wonderful for a week or two.

So if you think you don't need wheat, my advice is to 'just say

no' and simplify your life! My lifestyle can use a lot of

simplicity.
