Coconut oil is a highly digestible fat because it's mostly medium-chain triglycerides, and almost entirely saturated, and as it's so saturated it's very stable and therefore a good oil for sauteing and frying. You do have to be aware of the heat tolerance of the food you're frying, though, as its own lipids could be vulnerable to oxidation, and deep frying is unfortunately never good because it's just too hot. - Quote Link to comment Share on other sites More sharing options...

Coconut oil is used for babies with Cystic Fibrosis because it is SO digestible. Yes, it makes a difference! The MCT in coconut oil does not need bile to digest (and you are possibly low on bile or enzymes if you have all these problems). The Medium Chain Triglycerides go straight into the bloodstream, no digestion needed. I also find that eating kimchi with a meal makes it so much more digestible. I keep trying to go without my kimchi (I think I overdo it), and have some meal with no kimchi, and it just " sits there " feeling heavy til I eat some kimchi. It is decidedly addictive. It's not only gluten that causes trouble...it seems to be most grains altogether. Like, I can get away with quinoa and millet, but anything else has the possibility of ruining my day. No fun:( Oh, and someone said something about doing egg whites/tomatoes/cheese - a gentleman I think (???) - mmmmm, that sounds yummy. I'm gonna have to try that one for sure!
