Wow! I had a chance to follow my own advice today.

Our spinach was bolting! Whew, I sure was glad I knew

how to make kimchee out of it. Then I found about

three quarts of Jerusalem Artichokes in the

refrigerator. Hmm, those have been taking up space

since I spaded the garden in March! They were getting

fuzzy too, so yup, I modified the ginger carrots

recipe and did them up too.

Once finished I thought about sealing them with a

plastic bag of water. You can see how I did it

using a clean sandwich bag and about 1/4 cup of
