Whew, I sure was glad I knew how to make kimchee out of it. Then I found about three quarts of Jerusalem Artichokes in the refrigerator. Hmm, those have been taking up space since I spaded the garden in March! They were getting fuzzy too, so yup, I modified the ginger carrots recipe and did them up too. Once finished I thought about sealing them with a plastic bag of water.
