Many thanks to Dennis, and Heidi for your very helpful info on low-temp

yogurt making. I see I've been trying too hard and heating the milk too

hot. The simplest ways are best.

And Heidi, we don't have Gem here in Florida, and I don't see it among the

advertisers in " Wise Traditions. " Is that a mail-order place?

They have lots of interesting cultures to make cultured products with.

I tried the viili and fij mjolk on a lark (I also got my kefir grains from

them). I decided that kefir is the best of all worlds! But both viili

and fij mjolk are good alternatives.
