After adding the live culture (from another batch) I put everything in a glass jar. I place the jar on the counter with a heating pad around it & a bath towel draped over the whole thing to hold the heat in. It has never failed. If you are curious about what the temp is inside of the heating pad & towel, just place the tip of the candy thermometer next to the jar before you wrap the heating pad & towel around it. leave the end of the thermometer sticking out so that you can read it.
