Guest guest
Heidi, a while back you offered to post sorghum recipies. I'm behind on reading this list so I'm just catching up. I'd love to get some of your favorites! I'm intrigued by what's been written about this grain. If you don't mind, please post a few or add them to your e-book. I'd sure appreciate it. I have some intense writing to do though, between now and the end of the month (on my other book, which is about programming and very boring) which is taking up most of my time. But really, you don't need special recipes with sorghum, just use any ol' flour recipe and add a bit of xanthan gum. The " oatmeal " cookies that are on the files list already are the family's favorite food, but what makes the difference there is the kefir, I think. It makes great fried chicken, BTW. Just take some skin-on chicken, and roll it in a mix of sorghum flour, salt, and pepper (or use Montreal steak seasoning, which is good on everything). Add some poultry seasoning and cayenne if you want too. Then bake at 350. Another of those 15 minute meals that everyone likes ...
