Guest guest Posted August 1, 2002 Report Share Posted August 1, 2002 I just made the " basic muffin " recipe with blueberries from NT this morning, having soaked my wheat for 23 or 24 hours, and had the following problems: 1) she says cook it for an hour, but, at least on the outside, they looked done after 30 minutes. I took one pan out and tried them and left the others in. They seem fine, but I'm not sure what they're supposed to be. I'm watching the others now to make sure they don't burn, and they aren't, but are getting a little crispy. 2) For some reason, one pan seemed to rise, and the other did not. I have them on the same rack. I don't understand this. 3) She says put the blueberries on top so they don't sink to the bottom, and I did, but mine stayed on top rather than dispersing. I really do not feel having all the blueberries on the bottom is a big deal, but when they are on top they tend to burna nd make the pan a real mess to clean up! As to why one pan rose and they other didn't, would know what to say here. I do not really follow her recipees much I just convert recipees we like into NT ways of preparation. I used to make them all the time and I always mixed the blueberries into the batter. They never sunk to the bottom. They turned out just fine that way. I also used 1cup white flour and 2 cups whole wheat and added an extra egg. I don't know why one batch rose and the other didn't. Mine always rose.
