Guest guest Posted July 29, 2002 Report Share Posted July 29, 2002 Hi, I'm making my second batch of chicken stock now. After simmering, covered, for 20 hours, about half the water has evaporated. Is this normal? What are your experiences? When I didn't know about this list, I asked Sally if I was supposed to reconstitute the lost water, and she said yes, but that if it is covered simmering it shouldn't boil away.
